This is our favorite recipe for G-Free Pancakes. They’re super-easy, totally yummy and double-triple-quadruple nicely. =0)
Pancakes1 medium egg 1 banana 1 C milk (coconut milk works really well, too) 1 Tbsp vegetable oil (I’ve used olive and apricot with success) 1 C rice flour (buckwheat and quinoa flours work really well, too) 1 Tbsp baking powder 1 pinch of sea salt butter or margarine to frying ~ Mix dry ingredients together and set aside. Beat egg until light yellow. Break banana into pieces and add to egg. Continue beating to incorporate, then add the milk and oil. Slowly add flour mixture to wet mixture. Beat to mix well. Heat pan on medium heat (between 4 -6 on standard electric stoves) and melt butter to coat bottom. Once pan is hot, add pancake mixture. Flip pancakes when outer edges appear dry. Continue cooking pancakes until you’re sick of making them. ;0) Enjoy!
